Cooking With The Disney Princess Cookbook – Princess Tiana’s Southern Spoon Bread

My wife and daughter found some time this past weekend for some Mommy / Daughter time in the kitchen.  Helping Mommy cook is truly one of Jayla’s favorite things to do.  Jayla and Mommy recently made Abu’s Monkey Bread and it was such a hit they decided to make a side dish for Saturday nights pot roast dinner using Jayla’s cookbook, The Disney Princess Cookbook. After flipping through the pages, Jayla told us she and Mom were going to make Princess Tiana’s Southern Spoon Bread.  Perfect choice to accompany Kristi’s pot roast.

23Jan_Spoon Bread_1As you know, Princess Tiana likes to put her own spin on dishes.  Princess Tiana shares in this cookbook that this dish is a lot like cornbread, but this has a delicious gooey texture that is fun to spoon up at mealtime.

Here is everything you need to recreate Princess Tiana’s Southern Spoon Bread!

INGREDIENTS:
2 Cups Milk
1 Cup Water
1 TBSP Butter
1 TSP Salt
1 Cup Cornmeal
2 Eggs
2 TBSP Honey
2 1/2 TSB Baking Powder

DIRECTIONS:
1.  Heat the oven to 375 degrees F.  Butter a 2-quart casserole dish.

2.  Ask an adult to help you at the stove.  Heat the milk and water in a large, heavy saucepan over medium heat.  Turn the heat to low as soon as bubbles form against the pan (before the milk boils).  Add the butter and salt, and stir until the butter melts.

3.  Slowly whisk the cornmeal into the milk.  Keep whisking just until the mixture thickens (about 1 minute).  Remove the pan from the heat and let the cornmeal cool a bit.

4.  Next, separate the egg yolks and the egg whites into different bowls.

5.  Beat the egg whites with a mixer until they are foamy and stiff, and set them aside.

6.  Beat together the yolks, honey, and baking powder with a fork or whisk.  Then whisk the mixture into the cornmeal.  Pour the cornmeal mixture into the bowl of beaten egg whites.

7. Use a rubber spatula to gently fold the egg whites into the cornmeal.

8.  Scrape the spoon bread batter into the buttered casserole dish.  Ask an adult to help you put the dish in the oven.  Bake it until the top turns golden brown and a toothpick inserted in the middle comes out clean (about 25-30 minutes).  Serve the Southern Spoon Bread warm, scooping it out of the casserole dish with a big spoon!

According to Jayla this this recipe required a little more help from Mommy but she she had a great time making it.

Magical Day In The Kingdom

The year 2014 is going to bring a lot of great additions to this blog and the activities we do.  One of those additions is celebrating our friendships while inside a Walt Disney Park.  Our first celebration took place this past Saturday, January 11th and that day was called “Magical Day In The Kingdom”.  And what a MAGICAL DAY it was!  It was honestly one of the best days I’ve had in the theme parks since relocating to Orlando.

I’m still giddy with excitement at how many of you were able to attend.  I’m also so happy with how many of you followed with us in the parks online at Facebook and Twitter.  I was also happy to introduce live streaming using Ustream this weekend.  This was a first for me, so I apologize for any shakiness, bad pictures or poor sound you may have experienced.  I promise it will get better.  It has too because this too is a change that will be a part of blog activities in 2014.  .  You can find my Ustream channel here.

Bok Tower Gardens, A National Historic Landmark

04Jan_Bok_10The family and I took a break from Walt Disney World and other Orlando theme parks last weekend and took a day trip down to Lake Wales, Florida.  Located approximately an hour south of Magic Kingdom, Lake Wales is home to the National Historic Landmark Bok Tower Gardens.  Bok Tower Gardens is a 250 acre botanical garden and bird sanctuary and is home to the Pinewood Estate and Singing Tower.

During our visit we first made our way to the Pinewood Estate for it’s holiday home tour.  Pinewood Estate is a 20 room Mediterranean mansion and is housed on 8 acres of the garden property.  The mansion was built from 1930-1932 and has been restored to it’s 1930 appearance.  During the holidays, Pinewood Estate has many of it’s rooms decorate by different sponsored designers and the halls and stairways are decorated by local vounteers who have handcrafted many of the decorations.  This years Holiday Home Tour theme was “Celebrating Traditions”.  Room designers selected decor ranging from old, authentic ornaments to historic themes about the homes original owners, to various holiday traditions celebrated by their own families.  The rooms of in this 1930’s mansion were elegant and full of holiday traditions.  To make things interesting, at the end of the tour we were asked to make which room was our favorite and place into a voting bin.  The winning designed would be provided a special dinner for 8 in the mansions dining room.
04Jan_Bok_43 04Jan_Bok_42 04Jan_Bok_40 04Jan_Bok_36 04Jan_Bok_33After visiting Pinewood Estates, we made our way back out into the gardens.  The moss covered trees made a beautiful backdrop for the many budding roses, Camellia and other flowers.  One of the most beautiful floral arrangements were the sphere shaped poinsettias hanging amongst the moss covered trees.
04Jan_Bok_29 DSC_0084We continued walking through the gardens and made our way to the 205 foot tall centerpiece, the Singing Tower.  The tower is built on one of the highest points of elevation in the gardens, just south of a reflection pool where it reflects the towers full image.  The towers construction began in 1927 and is designed in a Gothic Revival and Art Deco style  At it’s completion the tower was dedicated by President Calvin Coolidge in 1929.  So what makes this tower sing?  The Singing Tower is home to a 60 bell carillon.  Bok Tower Gardens sponsors live Carillon concerts twice a day, 1pm and 3pm.  We were fortunate enough to hear Carillonneur Geert D’hollander perform.  It was amazing.  The sound of the carillon was heard through the entire garden and there was a special section with benches where you could watch the carillonneur play on a remote television.

Bok Tower Gardens has reciprocal benefit partnerships with various museums and cultural institutions throughout Florida and the American Horticultural Society. If you are a member of these participating organizations check your membership benefits to see what discount is available to you. These discounts can only be applied at the entrance gate upon arrival.

Admission tickets are valid for one day and do not include admission to specially ticketed events. Parking at the Gardens is always free.

Walt Disney World Monorail Closure Starting January 21, 2014 Through End of March 2014

Magic_Kingdom_Monorail_Entry_ArchIf you are visiting Walt Disney World during the time frame of January 21, 2014 through end of March 2014, both Monorail beams into the Magic Kingdom will be closed .  This scheduled maintenance will take place weekdays between 11:30am and 7pm for maintenance and this closure will only effect Magic Kingdom.  The Epcot beam will operate as normal.

During this Monorail closure additional buses, ferry boats and other watercraft will be available from Disney Resorts and the Transportation and Ticket Center, located at the Magic Kingdom parking lot.

Will Younger Kids Enjoy Epcot?

There are many Walt Disney World visitors who are under the misconception that Epcot is a theme park aimed at older kids and adults.  In fact, many families with younger children skip this park altogether during their Walt Disney World vacation.  What a pity!  There is so much fun to be had by younger kids at Epcot.  There are rides, shows, and restaurants that younger kids love.  Before you to decide to skip Epcot, check out all there is for younger kids:

Attractions and Rides

Innoventions — This is an often overlooked attraction but it is FULL of interesting hands on things for kids to do. These two interactive playground pavilions feature such activities as Segway Central, The Great Piggy Bank Adventure, Video Game Playground, Storm Struck and Test the Limits Lab just to name a few.

The Seas with Nemo and Friends — This new ride in this pavilion is aimed at younger children and the huge aquarium at the end of it is endlessly fascinating. You also don’t want to miss Turtle Talk with Crush where Crush (from Finding Nemo) actually interacts with the children.  Of course, there is the full-size working aquarium with real sea turtles, sharks and other wonders to explore!

Living with the Land — This gentle boat ride takes you through the many ways we live with — and rely on — the land.  The end of the trip takes you through the Epcot hydroponic gardens where you can see 9-pound lemons, Mickey Mouse shaped pumpkins and tomato trees!

Behind The Seeds Tour (additional charge) — For a small fee, you can actually walk through the hydroponic gardens and learn how the Walt Disney World scientists create this wonderful atmosphere. You will touch the plants, taste the food and release beneficial insects into the garden!

Ellen’s Energy Adventure — A fun look back at the prehistoric sources of energy.  The kids will love the moving theater cars and the dinosaurs!

Captain Eo — Join Michael Jackson on a 3D adventure to deliver a musical gift to an evil alien queen.  The special effects make you feel like you are part of the show!

The World Showcase — Truthfully, this section used to be a bore for young kids until the introduction of Agent P’s World Showcase Adventure. Join Agent P. from Disney’s Phineas and Ferb to help thwart Dr. Doofenshmirtz’s latest evil plan!  Follow clues using your F.O.N.E. to connect with the characters from Phineas and Ferb.  Follow the clues to help Agent P. save the day!  All throughout the World Showcase, they have set up different elements of the adventure that your child will control. It’s a TON of fun and your children will love it. My son spent HOURS completing the adventures in every country.

Kidcot Fun Stops — Check out each international pavilion while the little ones color and Kidcotdraw. See the Cast Member at any Kidcot Fun Stop to get a complimentary cardboard Duffy the Disney Bear for your child to decorate and personalize with the supplies provided at each station. Your friendly Cast Member will share insights about his or her native land, such as how to say “hello,” and give your child a stamp of Duffy in each country. Kids love to collect them all!

Dining

Princess Storybook Dining (Norway) — Four to six princesses are in attendance at every meal (breakfast, lunch and dinner) in this castle setting!  This fun meal takes place at Akershus in Norway and uses just one-table service credit.  Many guests prefer it to the pricier Cinderella’s Royal Table.  Your little princess will love it!

Garden Grill — The restaurant features Mickey Mouse, Pluto, Chip and Dale as well as amazing food grown right at Epcot. Even better, this restaurant revolves into the Living with Land ride!

Coral Reef — Located inside The Seas With Nemo and Friends pavilion where you actually eat Coral Reefinside the aquarium!  One wall of the restaurant is the glass of one of the aquarium tanks.  Watch sea turtles, sharks and stingrays swim by as you eat.  Kids are fascinated by the swimming fish and will spend much of the meal trying to identify the aquatic visitors using the guide one each table.  Parents join in the fun, too!

 

As you can see, Epcot is full of attractions for younger kids.  You can easily spend a day — or more — enjoying all there is to see and do.  If you were thinking about skipping this amazing park, I strongly encourage you to give it a try. You’ll be glad you did!

Oviedo Florida Real Estate Market Update For December 2013

jean scott realtyAll the key real estate metrics here in Oviedo point to a market on the mend and reverting to the historic mean. We have inched up to 2.6 months of inventory in the two Oviedo ZIP Codes, including Chuluota, giving sellers the edge. A high affordability index is providing buyers with still excellent values, historically, in real estate.

On December 16, 2013 The Orlando Regional Realtors’ Association reported, “Continued improvements in Orlando’s median price are helping more owners surface from underwater conditions and take the opportunity to list their homes, which in turn is boosting inventory and providing relief for buyers exhausted by competition.” (See http://goo.gl/OSV4lV for complete details and analysis). The average mortgage rate for November 2013 increased slightly by 8 basis points from September to 4.36%. Affordability index* for all of Orange and Seminole County was 187% for November 2013, down immaterially from the 190% reported for October.

*An Affordability Index of 101% means a family with median income earns 1% more than necessary to afford a median priced home.

In Oviedo and Chuluota, as reported by the My Florida Regional MLS (MFR MLS), 220 single family homes sold in the most recent 90 days (September 19 thru December 18, 2013) for a median price of $239,950. In the same period a year earlier, 249 homes sold (a decrease of 13.2%) for a median price of $200,000 (an increase of 20.0%). Median days to contract and close this year was 28 and 85 respectively, for the most recent 90 days, virtually unchanged from last  months’ reported 28 and 80, respectively.

In Oviedo and Chuluota, there are currently 192 single family homes listed for sale for a median price of $279,000. That is 2.6 months of inventory, just a little higher than the 2.5 months reported last month. A balanced market is considered between 5 and 7 months of inventory.

Of the 220 homes sold in the last 90 days, 144 (65.5%) were “normal” sales with a median price of $262,200. They took 21 days to go under contract and 60 days to close, virtually unchanged from the last reported 23 and 62, respectively.

Of the remaining sales, only 42 (19.1%) were short sales, up slightly from last months’ reported 15.0%,  that sold for a median price of $190,000. They took 24 days to go under contract and 165 days to close (median values) from the day the home was put on the market. These time frames are holding relatively steady with the duration of contract to close in the 4-5 month range.

There were 34 (15.4%) foreclosures, also called REO or bank owned homes sold with a median price of $179,900, 53 days to contract and 102 days to close.

The number of sales is slowing and the balance between buyers and sellers slowly moderating. While the percentage of short sales and foreclosures are significantly down over last year and now only about 1/3 of the market, that number has remained relatively steady the last few months. Home prices continue to appreciate.

Taking A Day Trip From Walt Disney World

Since moving to central Florida in 2012 I have visited the Disney Parks at least once a week every week. Yes, I know I’m spoiled, but hey when you take that “plunge” you will be able to do it too! This past week however, I wanted to do something I haven’t had the chance to do since moving here.  I wanted to take a day trip from Walt Disney World and go watch a Disney Cruise Ship sail out of port. For those of you who do not know Port Canaveral is an hour drive east of Walt Disney World and in 2014 will be home to the Disney Magic, Disney Dream and Disney Fantasy cruise ships. These beautiful ships set sail every week on Thursday, Saturday and Sunday afternoons.

DayTrip_1This is what you get to see when you come over the bridge into the city of Cape Canaveral…This is the Disney Dream!

I wanted to get the up close, in your face view of the sail away so we headed to the Jetty Park at Cape Canaveral. Now there is a $10 charge to park here, but it has the best views along with restrooms ,snack bar and a beach. In fact, I want to stay a night in the cute little cabins, but that’s another blog post.

DayTrip_2The rain looked really close this day, but we made it out dry. These huge rocks make perfect seats, though not very comfortable.

DayTrip_3Before too long…there was the Dream! Beautiful isn’t she!

DayTrip_4She certainly is a big girl…and I mean that in the most loving way. Look at the tiny people on top deck!

DayTrip_5It is so much fun to wave and yell “Bon Voyage” to the lucky passengers. Oh and the best part is the horn!!! Oh yes, be prepared because it is loud.

DayTrip_6It is amazing how this massive ship just floats right by without leaving any wake behind.

So, who is ready to set sail? I know I am! This was an awesome adventure and I can’t wait to do it again, but a little secret to keep you and me happy until we can set sail…there is a lovely, live webcam perched ever so perfect at Port Canaveral for your viewing pleasure  Cape Canaveral Cruise Ship Web Cam.
